This delicious and healthy thin mint cookie is so easy to make with no baking and easy cleanup. Plus, each cookie contains 2 grams of grass-fed whey protein and 1 gram of fiber with only 50 calories, less than 0.5 gram of sugar and gluten free!
3/4 cup Action Whey™ Chocolate
1/4 cup cocoa
7 tbsp coconut oil, melted
1 tsp vanilla extract
1 tsp peppermint extract
2 tsp stevia powder
Mix all the ingredients in a bowl until smooth and creamy. For the stevia, we used 6 packets of Stevia in the Raw™. We recommend melting the coconut oil very gently to avoid high heat.
Using a spoon, drop small amounts of the mixture onto wax paper and place in the freezer about 20 minutes or in the refrigerator about 1 hour. Store in an airtight container in the refrigerator. Makes approximately 20-24 cookies.
